First, you need to check the product in the admin and check if template listing has value http://screencast.com/t/qpyypmzoB
if that is empty then check the product category http://screencast.com/t/HfyZy2fD3
If both product category template and product template listing fields are empty then it should be using the default template which is tmp_productformat.htm
If you want to set the specific template as global for every product under that category then you should put it to category template file. But you want only to use a certain template to specific product only then you should put it under product template listing.
