It doesn't make sense to me that the security for users is their last name and e-mail address. I could completely guess this for just about anybody. Is there any mod or way out there for me to make this a user-chosen username and password combination?

If you go to your Admin Panel > Set-Up > Customer Information and find the fields xcustomeruserid and xpassword. Set these both to yes.
