Is it possible to have it sort/display new orders by category?

By product category or customer category?
Either way, with the standard 6.5 admin you can't I'm afraid. The order records do not store the product category or the customer type. You would need to write a custom SQL query to get product category information from the oitems and orders tables, or from the customers and orders tables.
