How can I disable display of the modules that aren't included with the Value edition from the admin section. I think these being visible will confuse and frustrate my customer...

In the Admin Console you can easily turn off any menu item you want per admin account.

Go to the Occasional Tasks tab - Users section - Admin Users. Click the edit icon for the user you wish to edit. The left column are all the menus. Just uncheck what you don't want them to see and Save.
