I was trying out a template i've purchased, then I tried to remove it ... now my default.asp file references one stylesheet "stylesheets/oxford/shop.css" and the rest of the site refers to "stylesheets/shop.css" ... anyone know where I change this setting?

Try to review your shoppage_header.htm file, there must be a code that pointed to your css on the head tag. this css should be used on each pages.

but if it still use an incorrect css, please try to clear your browser cache and then refresh the page.
and also try to check the homepage configuration from your shop content administration
