Few ideas sprang up for this but we found the easiest way to do it was alter the order summary in admin using a header and footer with simply 'packing slip' for the header and the shop logo. That way when you view the order in admin, you simply hit the print button.

Or, with a little simple custom programming you could create a simple report for printing

a report like this could contain any of the details collected during the order process, and could be laid out anyway you like it, this particular one is laid out to print onto A4 paper using minimal ink, and as little paper as possible.
