I would love to be able to show shoppers how much stock remains for each item. Since this might not be desirable for every shop, it would be great to be able to turn this feature on and off in the administration panel.

You should be able to do this using product templates. See section 8 starting on page 37 of "vpasp550developer.pdf"

It states "Any field in the products table can be placed into your template."

Therefore, you should be able to include the "cstock" field wherever you want in your product display.
