Is anyone aware of a modification to Pop-out category navigation (http://www.vpasp.com/sales/addons550.asp) which would not be limited to sub-category pop-outs but allow the pop out menu to list product items for each category?

this is quite a bit more complex that it appears; the request sounds simple enough, but when you get into the nitty-gritty of doing it you run into loads of questions about at what level(s) you should be displaying the products and at what levels you should only be displaying subcategories/categories, and what levels you should be displaying both.

as vpasp allows any number of levels, this logic obviously needs to be defined in a dynamic/generic way.

if your structure is simple and you would settle for a fully customised (but fixed-in-stone) solution rather than a generic one then it'd be relatively easy, but a generic solution to cater for all the permutations would be quite involved.

If anyone else wants this, post here and say so; if enough people want it then someone (ourselves included) might end up building a generic solution.
