Any ideas on how to get rid of the mailing list checkbox everywhere on the cart pages?

Sure. All you need to do is set the "xAllowMailList" and the "XmailListCheckBox" variables to "No" in the config panel. The first one controls it for the customer admin sections, while the second one controls it for the customer information form in the checkout process. In both cases, setting them to "No" will remove them/not display on the page.

That should do the trick.
