I am not 100% on what you are after but you could perhaps create a whole new folder for your 2nd hotel.
Now open the scripts for creating the MYSql Db and change the table name references to something new for example products could become productsH2 to refer to the fact that it is for the 2nd hotel. This way all tables added into the db will be separate from the existing ones.
Then do a sitewide search of the new folder to find all references to the products table and change to the new name.
Then do the same for the rest of the tables. It would be a very slow process though as you would have to do the changes individually rather than a general site wide change.
I could be totally off on one though as i am not totally sure if I grasped your problem correctly.
