I have added some additional tables to the customer service page by adding in HTML. The tables are white, so they don't show. I can't figure out how to change the original table to white, without changing ALL the tables using shop$colors. Does anyone know of a way?

Without a URl it is a bit hard. if you want to scoot an email to us perhaps we can have a look or maybe VPASP support can assist?

Sub FormatHeader, Sub FormatRow and Sub FormatTrailer. Each of those subs have calls to shop$colors to set up the table and rows. Either add your own variable to colors and call it or hardcode it into shopcustadmin. Personally I would copy and modify VPASP variables such as:
Const CustAdminHeaderRow="<tr bgcolor='#0080C0'><td colspan=2'>"
into
Const CustAdminHeaderRowMine="<tr bgcolor='white'><td colspan=2'>"
