First thing you need to do is locate your database OUTSIDE the www path. Second is to use built in security and encrypt the credit card data, so if you do have a problem they only get encrypted data

I highly recommend downloading the free credit card delete add-on. Every day run the asp once by going to its url and KA-BOOM your credit card numbers for processed orders are gone.

What will happen if new orders come in while you are running the credit card delete add-on?

The credit card delete file only deletes processed orders when you access. It you don't want to delete new orders simply do not process them. Even if you accidently process them just don't access the credit card delete file and they won't disappear on ya.
